Prison food – or a life saver?

This recipe is doing most of the heavy lifting for me, when it comes to fending off diabetes.

It’s just a simple chicken and lentil curry.

My other half says it looks like prison food, and she has a point. A really good point.

But, on the other side of things:

    It’s really, really healthy – and it has a very low GI

    It’s a meal you can eat mountains of, you’ll never go hungry.

    It’s lovely.

Best of all, I make loads of the stuff, break it in to portions and freeze it. This way I’ve always got a healthy meal to hand.

I’ve found this has made a massive difference. Because when you’re tired and just want to slob out in front of the TV, a fast and snappy pizza has massive appeal.

Now, I can just bang one of these in the microwave, eat like a horse and it’s all low GI.

Anyhow, here it is:

You’ll need chicken, cardamom pods, ginger, garlic, red onion, red lentils, cinnamon, garam masala, chicken stock, couple of chillis and a can of tomatoes.

I never cook with any measured amounts – you soon get a feel of how much you want of the different ingredients.

First soak the lentils for 1 hour or so. Here’ I’ve used a whole 500g bag.

Here’s the ingredients that you’ll throw in to the wok:

I use coconut oil (another superfood as far as I’m concerned)

Dump everything in and let it cook for a few minutes.

Add the spices, garam masala and cinnamon.

Stir it all up:

Add the can of tomatoes:

Cut the chicken up:

Feed the fatty bits to the dog:

Add any left over chicken from the roast:

Chicken stock made from the roast…

Whack it all in:

Oops. Way too much stock – but no problem, just let it simmer away.

So there you go, prison food or life saver? Either way, I don’t care, I concede it does look like proper man food, but I love it. And it’s proper, proper healthy too.

It’s this recipe – and the chicken and blackbean soup – that is keeping me on the straight and narrow at the moment. I never go hungry and there’s always a meal to hand: curry in the freezer, and soup in the fridge.
