A soup that’s a snack?

Soup doesn’t sound much like a snack. And I guess it’s not, but I’ve found myself snacking on this.

I make a load of it and just keep it in the fridge.

It’s made a difference for me, because instead of reaching for a cheese sandwich when I have the munchies, I just whack some of this in the microwave.

Like all the recipes, it ticks all the boxes when it comes to fighting diabetes.

But best of all, I can’t call this one prison slop because I’m not the only one that eats it – so it can’t be that bad.

It’s a spicey chicken and blackbean soup. Only I can never find blackbeans, so I use red kidney beans.

It’s stupid easy to make.

1-chicken-stock

I just roast a chicken. Boil up the bones for the stock.

2-roast-chicken

I prefer to roast the meat for my meals. I just find it tastier.

3-herbs

Here are the herbs you’ll need, chilli seeds, coriander and cumin.

4-base-of-soup

Dump a can of tomotoes and beans in a pan. Add the herbs.

5-whizz-soup

And the stock and simmer for a bit – then give it a whizz with the whizzer. This will thicken it a fair bit.

6-add-spinach

Add the chicken and a couple of handfuls of spinach.

7-simmer

Let it simmer for a bit.

8-eat-soup

Job done. Like most food, it tastes even better the next day.

I do genuinely snack on it. Can’t call it prison food though – sometimes I go to eat some and it’s all gone. So it can’t be that bad.
